Starting off his career with a culinary degree from Johnson & Wales University, Chef Bill Mallette studied under talented chefs from all over the world. With over 35 years of culinary experience, Chef Bill’s expertise includes upscale dinning, hotel dining and event catering. While traveling through France, Bill gained vast knowledge in the regional cuisine that transfers over to his work today.
Chef’s broad knowledge of diverse cuisine and fresh ingredients allowed him the pleasure of becoming a research and development chef for Whole Foods company. Working his way through the position, Chef had the opportunity to influence shopping trends and discovered ways to introduce nourishing alternatives to the standard American diets. Chef’s passion has grown with him as he always finds healthier and fresh alternative substitutions for his dishes.
Over ten years with Rockafellas & Colonial Hall, Bill is just as excited about adding new trends into his work as he was when he started. Using his culinary talents and experience, Bill has created a fine dining experience for events that cannot be matched. All meals are prepared from scratch where freshness, taste and presentation are paramount. He continues to provide creative & innovative menus which always leaves a lasting impression on our guests.
